We had plans for going out for a movie. But before that we wanted dinner - something different and simple we thought - and decided upon pulao. One pot meal with lightly sauted vegetables, cooked with rice and light flavoring.
It is quick and delicious and we were in time for the movie. :)
2 cups Basmati rice - washed and soaked for atleast 30 minutes
1/2 cup mushrooms
1/2 cup pea
1 medium onion - chopped thinly lengthwise
1 medium tomato - chopped
1/4 cup grated coconut - frozen or fresh
1 tspoon ginger- grated or chopped
1/2 tspoon curry powder
1/4 tspoon turmeric powder
1/2 tspoon chilli powder
1/2 tspoon garam masala
1/2 tspoon cumin seeds
1 bay leaf
1 tbspoon oil
6 cups water
salt to taste
Heat oil and temper with cumin seeds and bay leaf.
Once the cumin seeds are toasty, add the onions and ginger.
Saute till the onions are translucent.
Add the coconut and tomatoes and cook for another couple of minutes.
Then add the vegetables and powder masalas.
Saute it together for 5-7 minutes.
Once the vegetables mix well and start to soften, add the rice.
Cook it together till the rice starts boiling.At this stage, add the water, put it on medium heat and cook for 20-22 minutes till the water disappears.We enjoyed the pulao with carrot raita and roasted papad.
