Almost Spring Chicken Salad
The weather has been playing games for the last couple of weeks. Just when I think it's good to go out in a light jacket, the wind picks up or when I am all bundled up, it's nice and sunny in the afternoon. But when the weather forecast said snow, I balked. "NO MORE SNOW," I wanted to yell. But this first bloom I saw in the front yard cheered me up. I know spring can't be that far away.
This chicken salad is my defiance. I call it "Almost spring chicken salad" with colorful vegetables like tender lettuce, strawberries thrown in together. The dressing is lemon juice, sesame oil, cumin powder and it makes the salad fabulous.
Method:
2 chicken breasts ( this is from the chicken leftover from the previous recipe)
Marinated in:
1 1/2 tbspoon yogurt
salt to taste
1 tspoon fresh black pepper
1/4 tspoon turmeric powder
1/2 tspoon chilli powder
1/2 tspoon garam masala
For Salad: (for 2-3)
1/2 bag lettuce and purple cabbage mix
1/2 Onion - chopped
1 avocado - chopped
6-8 strawberries - hulled and chopped
1 tomato - chopped
1 medium cucumber - chopped
1 medium carrot shredded
For dressing:
1 lemon juice
1 tbspoon sesame oil
salt to taste
1/2 tspoon roasted cumin seed powder
pinch of fresh black pepper
Method:
Marinate the chicken and keep it aside for an hour. In the meantime, pre-heat the oven to 350 deg F and then grill the chicken for about 8-10 min on each side depending on the oven. Take it out and let it cool to room temperature.
Mix the rest of the ingredients together and put in the dressing an mix it well. Then add the chicken on top and serve.

ReplyDeleteSunita, Asha, Akal's Sappadu, Soma, Sandeepa Spring is not completely here, but this is the first bloom in my garden. I think in the next two weeks we will see much more blooms.
Lovely snaps Mandira .. as usual. :-) I too love the idea of using leftover chicken(especially form a spicy curry) in a salad. :-)

The weather of Spring is just like the weather of Autumn, when there's a little misjudgment will, perhaps, ruin a day. One minute is clear with hot sun, the next minute there we are, wrapping up warm from wind or sudden cold snap! Will feel good with this salad, though hehehe
