Ringing in the new year with Chocolate Banana Cake

Everything quietened the last week of December. We were off, spending time with family, relaxed, and caught up on sleep. All of this helped us get rid of the cold, cough cycle and start the new year on the right note :)

Our menu for new year was dal palak, and black beans& paneer for lunch and potato gnocchi for dinner. What was your new year menu?

To ring in the new year, I decided to bake a cake. Something simple with ingredients available at home. The choice was easy, I settled on banana chocolate cake. I got the recipe from Sunita's World, and altered it for our tastes. I added more bananas, reduced an egg, left out the cinnamon and added sugar. The cake turned out fabulous Sunita!

Ingredients:
2 eggs
2 ripe bananas
2/3 cup brown sugar
1 1/2 cup whole wheat flour
2 tspoon baking powder
4 tbspoons oil
4 tbspoon chopped dark chocolate ( I used 85%)
1 tspoon vanilla essence
handful of almonds slivers

Method:
Preheat the oven to 350 deg F. Butter the cake pan and set it aside.

Beat the eggs and add sugar till it mixes well. Then add in the bananas. When it is mixed well, with constant stirring, add in the oil and the vanilla essence.

Sift the dry ingredients together and then add it to the mix a little at a time. The batter should be runny and smooth. Once it's mix, add in the chopped chocolate and fold it with a spatula.

Pour the batter to the cake pan, add the almonds on top and let it bake for 40-45 min or till the toothpick comes out clean.

Cool completely. You can cut and store it in a airtight box. Tastes amazing with tea or coffee.

  6. Happy NY! Is your little one better? My little girl eats an orange a day a lunchtime and she's still not allowed sugar aged almost two. I swear by their immune boosting abilities... btw, the sicker he gets now the tougher he will be later. So don't fret too much.
