Guacamole Chicken

I am back from a long India trip. I was visiting India the last few weeks, but feels like I left yesterday. Now that I am back, I am thinking of all the things I didn't do, all the friends I didn't call. But I did attend a wedding, played holi after many years, spend time with my extended family, attended functions, but above all watched little A take his first steps while visiting my family!

Now it's trying to get over the jet lag, get back to routine and looking out for the first signs of spring.

Before I left, I saw this recipe on Food Network's Diners, Drive-ins and Dives. I don't know the name of the recipe, but I made up my own name - guacamole chicken. I mixed in some sweet potatoes, made some other changes and tried it right after I saw it and we both loved it. It was delicious and I am thinking of trying it again.

Here is the modified recipe.

guacamole chicken

Ingredients:
1 sweet potato
2-3 pieces of chicken
1 1/2 ripe avacados
2 tsp Worcestershire sauce
1/2 onion - sliced thinly
1/2 tspoon pepper
1/4 tspoon chilli powder
1/2 tspoon cumin seed powder
salt to taste
1 tbspoon oil

Method:
Chop the sweet potatoes and chicken with salt, pepper, chilli powder, cumin seeds and oil and bake it on 350deg C till it is cooked.
Slice the onions thinly, and chop the avacados in small cubes. Now comes the best part.

Mix it all together with your hands. Add in the Worcestershire sauce and mix it all together once more.

Now heat some tortillas, fill in the guacamole chicken and make a nice wrap. We enjoyed ours with a light salad.
