Playdates are a lot of fun for Nicole and me. It has become a ritual since we began in 2011. Yes, it has been a year since the last one. But we had an ambitious plan for this one, to make sweet potato gnocchi.
To make things easier, we made some sides beforehand and then got together to make the sweet potato gnocchi together.
The dinner menu was:
Sweet potato gnocchi
Strawberry and chocolate mini cheesecake
We chose the recipe from epicurious and followed it except for reducing some of the butter, cheese, sage and taking out the nutmeg.
Here is how we did it.
2 sweet potatoes
21/2 cups fresh ricotta cheese (let it drain for an hour before adding it)
1 cup parmesan cheese
2tbspoon brown sugar
2 tspoon salt
3 cups all-purpose flour
1/2 stick butter
1 tspoon fresh chopped sage
Microwave the sweet potatoes till they are cooked about 5 minutes on each side. Then take it out, cool and cut it in half.
Put 3 cups of mashed sweet potato in a mixing bowl, add the ricotta and parmesan and mix it well together. Then add the sugar and salt and mix.
Then add the flour, about 1/2 cup at a time till a soft dough forms. Then divide the dough in six parts and then divide each part in half to make 10 inch long rope. Cut the rope in 10 pieces and then roll it off a fork to form indentation.
Bring a large pot to boil and salt it with 2 tablespoon salt and oil. Cook the gnocchi for 6-10 minutes.
